Serves 2

Prep time: 2 mins

Cooking time: 5 mins

  • 2 tortillas
  • 4tbsp passata
  • Pinch dried oregano
  • 100g mozzarella, sliced
  • 100g cheese (Cheddar, Red Leicester, blue or Parmesan all work well, but it’s a great chance to use up any leftover cheese from the fridge), grated, crumbled or sliced
  • 120g fresh spinach, wilted
  • 2 eggs

Serves 8

Prep time: 35 mins, plus 2 hrs’ freezing

Cooking time: 5 minutes

  • 1L vanilla ice cream
  • 1 x 390g jar cherries soaked in kirsch
  • 1 large sponge flan case
  • 5tbsp cherry juice
  • 7tbsp cherry jam
  • 6 large egg whites
  • Pinch cream of tartar
  • 275g caster sugar
